the hiwatts he was using were EL34 based. the blues junior, although at a lower wattage, wont sound exactly like those, but you can mimic the sound a bit.
Swapping out a vintage 30 with the stock Jensen wont really do so much to the sound as Gilmour's Hiwatt was pushing the speakers to the point of breakup. Putting 15 watts into a 60 watt speaker isn't going to do anything to the speaker.
If anything, I'd recommend trying a Celestion Alnico Blue. It's a 15 watt rated speaker and will get the breakup you're going for.
Another thing to look into would probably be some sort of EQ pedal so you can mess with the tonal variations of the amp, as it doesn't have a large range of tonal knobs.
